A Peach of a Recipe for Labor Day

Like I said last week, I’ve always loved the whole back-to-school thing. But it’s still kind of sad to see summer dwindling. 

Enter Labor Day Weekend: Summer’s swan song and our last opportunity to suck every bit of fun we can out of the season.

Whatever your plans are this weekend – whether it’s a party at your friend’s house, pot luck with the neighbors, or just hanging out with family in your own backyard – have I got a side dish for you! 

Why have a traditional, goopy, mayonnaise-soaked potato salad when you can have my Peachy Keen Sweet Potato Salad instead?

Peaches are one of summer’s quintessential fruits. As a kid, I couldn’t wait for summer peaches to arrive in stores. My daughter is the same way. The good news is that they’re in season until the end of September, so you have plenty of time.

Not only are juicy peaches just plain delicious, but they also have tons of health benefits. The vitamins A, C, and E in peaches help boost the immune system and keep your skin healthy. They’re also powerful antioxidants that help protect your body from the kind of damage that can lead to cancer or heart disease. These antioxidants – combined with lutein, zeaxanthin, and copper – make peaches great for your eyes. Peaches are rich in potassium, too, which supports healthy blood pressure and aids in recovery after exercise. Finally, the fiber in peaches balances blood sugar, helps you feel full, and keeps your digestive system in working order. All wrapped up in a little fuzzy package!

The key with this recipe is making sure your sweet potato cubes are relatively small and uniform in size so they cook through. Other than that, it’s pretty simple, quick to prepare, and easy to clean up. So give it a try. Your eyes, skin, heart, immune system, digestion, and taste buds will thank you.
